Roasted Shrimp with Roasted Potatoes and Salad

For the shrimp:

1 pound shrimp (12 to 15 count)
1/2 tablespoon olive oil
pinch of salt
pinch of ground black pepper

For the sauce:
1/4 cup chili sauce (Mae Ploy)
1/4 cup ketchup
1 tablespoon horseradish
1 teaspoon lemon juice
splash Worcestershire sauce
splash Tabasco

Directions:

  • Preheat oven to 400 degrees F
  • Peel and devein the shrimp. Place them on a sheet pan with olive oil, salt and pepper.
  • Roast for 8 to 10 minutes, just until pink and firm and cooked through. Set aside to cool.
  • For the sauce, combine all ingredients. Serve as a dip with the shrimp.

Roasted Potatoes:
1 pound small red potatoes
1 tablespoon chopped rosemary
1 tablespoon olive oil
1 tablespoon chopped garlic
Pinch ground black pepper

  • After shrimp is cooked, preheat oven to 475 degrees F
  • Combine rosemary, olive oil, garlic and pepper in large bowl. Add red potatoes and toss to coat.
  • Arrange potatoes in a single layer on a baking sheet coated with cooking spray.
  • Bake at 475 degrees F for 30 minutes or until potatoes are golden

Mixed Greens Salad
2 cups chopped romaine or mixed greens of your choice
1 cup shredded carrots
1 cup sliced cucumbers, peeled
1/2 cup red cabbage (optional)
1 Tablespoon favorite salad dressing

Yields 4 servings:

**Note, the above nutrition facts does not include salad dressing. Depending on what type you enjoy, it can add a lot of calories so be sure to read the ingredient list and stick with a salad dressing with no more than 150 calories per serving. Be sure to measure your salad dressing! It is easy to over indulge in ranch dressing without measuring it. Yes, I do enjoy ranch dressing every now and then, yet you will see me with my measuring spoons! Some of my favorites include:
