Easy Egg Muffins

This recipe is adapted from a recipe I found online. I recently made them and was amazed at just how easy they were to make. You can add your favorite chopped vegetables. Some favorites include chopped bell peppers, chopped spinach, green onions and mushrooms. Make sure to line the tins with paper liners or grease lightly with olive oil or cooking spray, as I learned the hard way! Serve with a slice of toast (whole wheat) and a piece of fruit for a complete, nutritious and filling breakfast! Makes 6 muffins, perfect for a family breakfast! Modify the recipe if only making a few.

Ingredients

5 whole eggs
2 egg whites
1 cup chopped vegetables (or more!) of your choice
1/4 cup shredded cheese
pinch of salt & pepper

  • Preheat oven to 350 degrees F
  • Line muffin tins with paper liners or spray with cooking spray
  • Combine whole eggs, egg whites, chopped vegetables, shredded cheese, salt and pepper in medium size bowl
  • Pour mixture evenly into muffin tin
  • Bake for 20-25 minutes, or until the egg is fully set
