Egg McMuffin

This recipe is an easy way to get a serving of vegetables in the morning! Spinach is one of those power house, super foods you hear in all nutrition magazines, books, shows etc. Why? well spinach is loaded with vitamins, minerals, beta-carotene, vitamin C, folate, iron, magnesium, carotenoids, phytochemicals AND antioxidants! who knew all of that was in spinach! no wonder why it is so good for us! So give this recipe a try. The addition of an egg white increases the protein content while keeping calories and cholesterol at bay. Plus, this recipe takes about 5-7 minutes to make. Talk about fast food!


Egg McMuffin

1 Whole wheat English Muffin
1 whole egg
1 egg white
1/2 tsp olive oil
1 cup fresh spinach
1 slice jarlsburg cheese
Pinch Black Pepper (optional)

Toast English muffin in toaster. Meanwhile whisk whole egg and egg white together. Add black pepper. In a small saute pan, saute spinach with a little water, around 3 minutes, or until wilted. In a separate pan, add 1/2 tsp olive oil over medium heat. Add the eggs to the pan. Flip eggs over after about 3 minutes, or until cooked through. Continue to cook for another 3 minutes. Add slice of jarlsburg cheese to the egg mixture. Place egg on top of english muffin. Add spinach mixture and enjoy!
